Easy and quick pancakes, perfect for a cozy breakfast! We love ours with Nutella and fresh berries.

Ingredients: 1 cup all-purpose flour, 1 cup almond flour, 1 teaspoon baking powder, a dash of salt. 2 eggs, 1 1/2 cup milk (add another 1/2 cup of milk for thinner batter), 1/2 teaspoon vanilla extract, 4 tablespoons olive oil.

Instructions:

  1. In separate bowls, combine dry and wet ingredients.
  2. Make a well in the dry mix and add the wet ingredients. Stir until fully combined.
  3. Heat a cast iron pan over low heat and lightly grease with olive oil.
  4. Scoop batter onto the pan, cooking for 2–3 minutes before flipping.
  5. Continue cooking until both sides are golden brown.

Top with Nutella and berries, and enjoy your weekend treat!
