
Banana Blueberry Muffins
Ingredients:
- 6 tablespoons olive oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup milk
- 2 very ripe bananas, mashed
- 1/4 cup granulated sugar
- 1 cup unbleached all-purpose flour
- 1 cup finely ground almond flour
- 2 teaspoons baking powder
- Pinch of salt
- 1 cup frozen blueberries
Instructions
- Preheat the oven to 375°F. Line a 12-cup muffin tin with paper liners or grease the cups.
- In a large mixing bowl, combine all the wet ingredients – olive oil, eggs, vanilla extract, milk, and mashed bananas. Mix well until smooth.
- In a separate bowl, combine the sugar, all-purpose flour, almond flour, baking powder, and a pinch of salt.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined. Be careful not to overmix.
- Gently fold in the frozen blueberries.
- Divide the batter evenly among the 12 muffin cups, filling each about 2/3 of the way full.
- Bake for 25-30 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Allow the muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
